In Lebanon, olive growing ranks first in tree production. Olive trees perfectly suit our climates, notably the altitudes between 300 and 700 m. Since the end of the Lebanese civil war, the productive surfaces of this crop have evolved due to a renewal of the abandoned orchards and the cultivation of new surfaces. This situation has led to an increase in the production from 17.000 t / year to 35.000 t / year. This produce is processed in 384 oil mills broken down as follows: 219 traditional mills, 81 modern mills (2- and 3-phases) - the remainder being undefined. This census relates the impact of agricultural techniques and production procedures to the quality of the olive oil obtained, as well as to the management of the olive waste for each type of procedure.
